Diversifikasi Pangan Olahan Buah Nipah (Nypa Fruticans) Sebagai Bahan Kombinasi Produk Nugget Ayam dan Bakso Ayam
Abstract
Nipah fruit (Nypa fruticans) is usually used as a food source. The purpose of this study was to determine the effect of adding nipah fruit on the nutritional content of nuggets and meatballs with the addition of nipah fruit 0%, 20%, 40%, 60% and 80%. The proximates tested were water, ash, crude fiber, fat, protein, total carbohydrates and minerals. From the results it was concluded that the addition of nipah fruit had a significant effect on water content, ash content, crude fiber content, fat content, protein content, and total carbohydrate content of meatballs products, but the addition of nipah fruit did not have a significant effect on the protein content of nuggets products. The addition of nipah fruit can also increase the mineral content of the nuggets and meatballs products produced.
