Abstract


ABSTRACT

Inulin degrading enzymes from thermophilic bacteria is potential developed in food industry to produce fructose and fructo-oligosaccharides (FOS) prebiotics. In this study, inulin degrading enzymes from thermophilic bacterium Bacillus licheniformis was purified partially by ammonium sulfate. Molecular mass of inulin degrading enzymes was determined on 10% sodium dodecyl sulfate polyacrylamide gel electrophoresis (SDS- PAGE). Molecular mass of inulin degrading enzymes from Bacillus licheniformis was predicted 57.2 kDa. The enzymes activity was conducted on inulin granula from chicory. The enzyme was active on inulin granula. Β-sandwich domain of the enzymes was thought to degrade inulin granula which is insoluble polysaccharides.
