ABSTRACT

 

Chitin is one of the most abundant polysaccharides found in nature. The objective of this experiment were to find out: 1. The effect of 40%, 50% NaOH and 40%, 50% KOH on chitin deacetylation degree; 2. The best of chitin deacetylation degree. The kind of this experiment was two factor experiment. The factor one was the kind of base (NaOH and KOH). The factor two was variation of base concentration (40% and 50%). The result of experiment showed that KOH and NaOH in concentration 40%, 50% were no significantly affected on chitin deacetylation degree. The best of chitin deacetylation degree was using 50% NaOH.
